How do I keep the back of this x-stitched bib looking clean?

I picked up this Bucilla bib kit on clearance yesterday and am thinking of making it as a baby shower gift. I'm an experienced counted cross-stitcher but have never really done stamped cross-stitch before. This is a quilted bib with the pattern stamped on it, so of course there's a front layer of fabric and a back layer of fabric, with some batting in between. If I work this as I would "normally," the back of the design will be on the back of the bib, including any carryovers and the beginnings and ends of floss. Since there are 2 layers of fabric, does anyone have a tip on how to work this project so that the back of the pattern is *inside* the bib where it can't be seen? I can figure out how to work a stitch so that the needle doesn't pierce the back fabric but am not sure how I would start and end a section of floss. There are no tips on the instructions that came with the kit.   1. Loop start your stitches, and finish with a quilter's knot that you can pop through to the midlayer. If that doesn't feel secure enough to you, add a tiny drop of June Tailor Fray Block (not Dritz Fray Check) to the last couple of stitches. Or stitch through as you would if dealing with a single layer, and slipstitch a lining over the back when you're done. Or remember it's just a bib. <g>
